В eq статье рассматриваются методические eq вопросы анализа конъюнктуры eq мясного рынка, отмечаются eq особенности спроса на eq отдельные виды мяса и eq их предложение, дается eq характеристика структуры и динамики eq предложения мясного сырья, eq предлагается методика оценки eq его качества. Выделены факторы, определяющие сужение мясного рынка в последние годы. Темпы изменения объемов производства мясной продукции имеют институциональный характер. За годы рыночных преобразований произошли существенные изменения в видовой структуре потребления мяса. Подчеркивается необходимость качественной оценки мясного сырья. Эластичность предложения мяса определяется комплексом экономических факторов. Соотношение eq между различными видами мяса зависит от eq природно-климатических условий и половозрастной структуры населения.
